Homemade Guacamole Recipe

With only a little over a month left in my pregnancy, I surprisingly have had very few cravings. A few cravings have come and gone, including perogies, Eggo waffles, fresh raspberries and blueberries, Cheerios, and iced tea.  The other night I got a hankering for some homemade guacamole, so I thought I'd share one of my most popular recipes. 

Here's what you're going to need. Gather your ingredients and let's get started.

I like to make my guac in this pestle and mortar I got in Mexico. It works well to prepare the dip in, as well as makes for a nice presentation when serving.

Start with juicing 1/2 to 1 small lime (depending how citrusy you like your guacamole). 

Next add 2 ripe avocados.  I like to use cold/refrigerated avocados if I am serving the dip right after making it.

Not to brag but... my guacamole is usually a hit and I like to think this is why.  2 cloves of garlic, minced.  My secret ingredient :)

Next, dice up 1/4 to 1/2 of a ripe slicing tomato.  This adds some color and texture to the guac.

Time for the greens! Chop (or cut) up one green onion. Sometimes I will substitute white onion for green; either will work fine.  Add as much or as little cilantro as your tastebuds desire.  I am a fan so I usually add a several leaves.

Sea Salt! Another KEY ingredient.  Forget the salt and you will have some bland guac.   The salt helps bring out the flavour of the dip.  I usually add it to taste, but is somewhere around 1 tsp.  Don't be shy with the sodium.

All ingredients are added! If you like your guacomle a bit spicy, try adding some diced jalapenos! I will from time to time, although I have to sneak them in as my husband is not a fan ;)

You are now ready to start smushing. 

You can do it, put your back into it!  The pestle and mortar works well for smashing everything together. If you don't have one, a fork works as well.  It is important not to over mix everything into mush.  Leave it a bit chunky.

The perfect consistency! You are now ready to enjoy your guacamole.  Wasn't that easy?!
